The mass basis has to be real. A beverage formula is specified per serving: every ingredient in grams or milligrams per can or bottle, summing with the water to the exact fill. Percentages that don't resolve to a serving mass are how founders end up with a "formula" no co-packer can run.
Acidity decides your manufacturing path. For shelf-stable drinks, pH is destiny. Hold the finished drink at a pH below 4.6 and you're in acidified-beverage territory with gentler processing options. Sit above it and you're into retort or aseptic processing, which changes cost, equipment, and which manufacturers can run your product at all.
